Bircher Muesli

This simple Bircher Muesli is one of my all time favourite breakfasts. The apples and dates lend a natural sweetness without needing to add any refined sugar and the combination of coconut, cinnamon and apple is a real winner. Oats contain a compound called beta-glucan which helps to lower cholesterol, balance blood sugar and boosts the immune system and are the perfect health promoting breakfast food.

Ingredients:

  •  1/4 cup raw oats

  •  1 green apple, grated

  •  1 cup unsweetened almond milk

  • 1/4 cup desiccated coconut

  • 2 fresh medjool dates, chopped

  • 1 tsp ground cinnamon

Method:

  1. Mix all your ingredients together and place in an airtight container in the fridge for 6-8 hours before serving to allow the oats to soften and the flavours to infuse.
  2. Serve cold or heat through to make a warm porridge.
